Happy Valentine’s Day all!
While what I’m about to share would’ve been the perfect Valentine’s Day breakfast in bed for your significant other, I didn’t get around to getting this post up in time. Therefore, it will now be the perfect belated breakfast in bed. And if you’re single this Valentine’s Day, then show yourself some love and eat this tomorrow to start your day off right!
How did this creation come to be, you ask?
Last week I had some downtime between meetings and work and ended up at le pain quotidien, a cute little boulangerie chain here in NYC. There are lots of reasons I frequent there often, one of them being that they use organic ingredients whenever possible and have lots of healthy options.
Despite it being lunch time, I went the breakfast route and ordered the quinoa pear cereal with a side of soy milk (they usually have almond milk, but had run out; yes, they have almond milk as an option – what’s not to love?!):
Simple ingredients & yummy; I had to try making something similar at home.
Quinoa Apple Cereal

serves 2 (2, 1 c servings)
What you need:
- 1/2 c quinoa + 1 c water
- 2 dashes cinnamon
- 2 pinches iodized sea salt
- 1 granny smith apple, peeled & cut into chunks
- 1/8 c raisins
- 1 tsp coconut oil
- 2 tsp cacao nibs
- 2 tbsp almonds
- 4 tbsp almond milk (or milk of choice)
What to do:
- Prepare quinoa – once simmering, add the cinnamon and salt; let simmer about 18-20 minutes
- Add apples, raisins, coconut oil and turn off heat – let sit covered for 5-10 minutes to let apples soften
- Separate into two bowls and add cacao nibs, almonds & milk
- Chow down!
Clearly I used red quinoa – any old quinoa will do. Feel free to substitute pear for the apple and throw in any nuts you desire.
This cereal is light yet filling and packed with protein and all sorts of good for you ingredients. Love is in the air…
