Dark Chocolate Chip Coconut Oatmeal Cookies with Coconut Oil

My little sister came to visit a couple of days prior to Christmas.  And we like to get our bake on.

Last year we made Burrito Brownies.

Recently she’s been on a coconut oil kick.  And most of you know I’m Cuckoo for Coconut Oil.  Therefore, it only made sense to make some sort of delicious baked good that calls for lots of it.

We went with…YET ANOTHER AMBITIOUS KITCHEN RECIPE: Chewy Chocolate Chunk Coconut Oatmeal Cookies {made with coconut oil}

Our tweaks:

  • While we LOVE coconut oil, we toned it down a bit and went with a heaping 1/2 c, melted
  • 1/2 c dark chocolate chips
  • milk: almond, obvi

Takeaways:

We ended up with about 18 cookies and baked them for more like 15-20 minutes.  About halfway through I pressed them down with a spoon since they didn’t seem to be budging at all.

Maggie, aka little sistah, couldn’t stop eating them once they cooled.

Since we didn’t use all the coconut oil the recipe called for, they were a little dry, but in a good way.  Guess you’ll just have to make them for yourself to see what I mean!
