Because what else do you do when you leave a sweaty SoulCycle class?
Typically I slowly make my way home, sometimes stopping at my favorite coffee truck along the way. But today I was in a huge hurry – my building apparently had some “emergency” they needed to shut off the hot water today for, from 9am to 5pm!!! Not ideal. This is what happens when you don’t work the typical 9-5pm job I guess; c’est la vie!
So, I did what any normal person would do when they’re soaked with sweat, in desperate need of a shower and in a rush: I checked my e-mail and came across a recipe for Healthy Pumpkin Chocolate Chip Oat Bars from Ambitious Kitchen! I was able to scan the ingredients while I darted home. Quite the feat, especially since I made it home with just enough time to spare.
But, anyways, I HAD ALL THE INGREDIENTS! How could I not make them? Post shower, obvi.

I decided to half the recipe since my boyfriend probably wouldn’t eat them and it’s not like I need to eat a whole pan of pumpkin chocolatey goodness by myself. Or, do I? Hmmm…
The only tweak I made was omitting the cloves. I didn’t have them, and I don’t really like them, a win win in my book.
Don’t mind the weird lighting difference. The real pre-bake was a little more pumpkin looking, while the actual post-bake isn’t even remotely that orange. Clearly, I’m not a professional photographer!
