I have to admit, sometimes pudding just hits the spot. Especially chocolate pudding.
It brings me back to when I was little. My Nana often would make us chocolate pudding when we visited her house. I don’t know what her secret was, but it was the best pudding I’ve ever had, hands down. Sometimes I’d even pour a little cream on top.
These days, I don’t really consume pudding. I used to occasionally buy those 100-calorie packs until I started really checking out labels…
SKIM MILK, WATER, SUGAR, MODIFIED CORNSTARCH, COCOA PROCESSED WITH ALKALI, CORNSTARCH, CONTAINS LESS THAN 1% OF SALT, SODIUM STEAROYL LACTYLATE (FOR SMOOTH TEXTURE), SODIUM ALGINATE, CALCIUM PHOSPHATE, NATURAL AND ARTIFICIAL FLAVOR, ARTIFICIAL COLOR, VITAMIN A PALMITATE, VITAMIN D. CONTAINS: MILK.
Say what? YUCK!
Then it recently dawned on me that you can make healthy pudding with only a few simple (and healthy) ingredients & I got to work…
Chocolate Raspberry Chia Pudding

Serves 1
What you need:
- ½ c unsweetened almond milk (check out my homemade version here)
- 1 ½ tbsp chia
- 1 tbsp cacao
- ½ tbsp agave
- ½ c raspberries
What do to:
Throw all ingredients into a mason jar (or Tupperware container) and shake. Place in fridge overnight.
So good that I can’t believe how easy and healthy this is. Even the boyfriend approved, and that says A LOT.
And let’s not forget this is gluten-free, dairy-free AND vegan!
